Make Mother’s Day even more special with the Omakase menu at Nobu KL
Nobu Kuala Lumpur is paying homage to Mother's Day 2015 with a special 7-course Omakase menu that features a range of textures and flavours to suit the occassion. The menu is available exclusively on 8 May 2015 (lunch and dinner) and 9 May 2015 (dinner only). Going Places magazine was specially invited to review the 7-course dinner and here's the preview of what will be served.
Sushi Bar Starter Trio
The 7-course Omakase menu starts with the Sushi Bar Starter Trio that consists of white fish tiradito, yellowtail tartar with caviar and seared tuna tataki. Consumed in sequence, the white fish tiradito has a zesty flavour that is coupled with the smooth texture of the white fish and it initiates the tastebuds for the meal. The yellowtail tartar with caviar provides another layer of savoury flavours due to the additional ingredients of wasabi and shoyu, it's a very appetising starter that is also pleasing with the soft texture of the grounded yellowtail fish. Additionally the yamamomo (Japanese bayberry) condiment that is to be taken separately gives a natural peach-like sweetness to complement the savoury aftertaste. Finally the seared tuna tataki merges the flavours of tuna and ginger, making each bite flavourful and tangy – while the supple texture makes this appetiser dish a satisfying kickstarter.
Nobu Assorted Sushi
As the name implies, this dish consists of four sushis, which are toro (tuna belly), kanpachi (yellowtail fish), white fish and local shrimp. This dish is traditionally prevalent at special occassions and weddings in Japan. The combination of these four sushis creates a series of flavours and textures such as buttery and soft (from the tuna belly); firm and fresh (yellowtail fish); buttery and smooth (white fish); and springy and savoury (local shrimp).
Butter Lettuce Dry Miso Salad
This salad consists of light and simple ingredients namely yuba (tofu skin), dry red miso, parmesan cheese, yuzu vinaigrette, butter lettuce and truffle oil. While simple, the mixture of these ingredients creates a flavourful dish that is light, crispy and savoury, all at the same time.
Salmon With Lavender Infused Amazu Ponzu
This dish consists of Norwegian organic salmon cubes that are lightly coated in Japanese potato flour then flash fried and lightly marinated in lavender-infused Amazu Ponzu sauce. The cubes sit on layers of apple jelly and are topped with a lavender-infused sphere of Amazu Ponzu sauce, nori crust and Fuji apple chip. The salmon cubes are recommended to be consumed whole to harness the complete flavours the chef intended – which are sweet, zesty and fishy with hints of plum and tangy aftertastes.
Wagyu Truffle Terriyaki
In this dish, the premium wagyu beef is prepared with truffle oil, teriyaki sauce and accompanied by padron peppers, root vegetables and alfalfa. Aside from the soft textures of the beef, the gamey taste is further enhanced by the combination of teriyaki sauce and truffle oil, giving an exotic aroma not normally found in Japanese cuisine. The root vegetables are suitable accompaniments to balance the meaty textures.
Inaniwa Pasta
The inaniwa pasta topped with sesame, capsicum, onions and julienned cucumber are consumed after mixing the noodles with the tofu broth made with white tofu, dashi, miso and shoyu. The aftermath of the mixing creates a noodle dish that is lightly savoury and creamy at the same time but unlike any western pasta.
Green Tea Shaved Ice
Ending the 7-course dinner is the green tea shaved ice dessert made with organic soy milk, caramelised azuki beans, green tea syrup and shiso jelly. Malaysians will find this dessert reminiscent of the popular local dessert called ais kacang or ABC. With the shaved ice made from organic soy milk, this dessert wraps up the meal with its cool sensation and the tinge of sweetness from the azuki beans while the bitterness from the green tea syrup and shisio jelly readjust the pallate into a neutral state.
