Royal Thai recipes meet modern fine dining, crafted with intention by award-winning Chef Poom
Bangkok has no shortage of Thai fine dining spots, so opening another one isn’t exactly groundbreaking. But Wisetwiso, which opened in March 2026, brings something a little different to the table: royal Thai culinary heritage reimagined for today.
The restaurant takes its name from two words: wiset, a term used for royal court cooks, and wiso, which means beauty.

Tucked away from Bangkok’s busier thoroughfares, the restaurant feels more like a private home beside a lush garden. Lighted stone steps lead up to the entrance, with a faint whiff of jasmine in the air, before guests enter a dining room framed by glass walls, with white-clothed tables and an open kitchen in full view.
Chef Chakkrapoom Booyakom, better known as Chef Poom, grew up learning royal Thai cooking traditions from his grandmother, a former palace cook. A recipient of the Thai Fine Dining Award at Chef X Fest from the Tourism Authority of Thailand, he’s no stranger to the spotlight, having competed on Top Chef Thailand Season 2.
The 10+1-course tasting menu is a journey through Thai culture and flavour – thoughtful creations made with local ingredients and modern presentation. Highlights include dry-aged red snapper served under a smoky glass dome with tom-kha cold soup and a crispy taro dumpling filled with crab meat, with cucumber and kombucha gel beneath. The pomelo salad with sun-dried squid roe and crispy shrimp is drizzled with a housemade dressing taken from Chef Poom’s family cookbook.

There’s also fresh river prawn immersed in hearty kang liang broth with lemon basil foam, milk-injected coconut chicken that’s incredibly tender, and beef from a Japanese Wagyu and French Charolais crossbreed, exclusive to Wisetwiso, served mid-rare in Panang curry alongside kra-bok rice cooked in kapok butter.
Dessert comes in threes, with the corn ice cream and warm corn tea standing out as the most inventive course of the night.
At THB3,850++ (about RM470++) for 11 courses, Wisetwiso feels surprisingly accessible for Bangkok fine dining. Wine and juice pairings are also available, with a knowledgeable sommelier on hand. Advanced reservations are required via wisetwiso.com.
